Ingredients
- 3 cups baby arugula
- 6 cups cut up melon (watermelon, cantaloupe, honeydew)
- ½ cup thin red onion slices
- ½ cup feta cheese
- ¼ cup orange juice
- 1 tablespoon lime juice
- ¼ teaspoon salt and pepper
- ¼ cup olive oil
- 2 garlic cloves minced
- ½ cup fresh herbs (basil, mint, parsley)
Tips for choosing the best produce:
- watermelon: look for a more golden ground spot on the bottom of a watermelon and white rind on the stripes
- cantaloupe or honeydew: if you can gentle depress the skin on the opposite side of the stem.
