Triple Melon Salad

Serves: 6

Ingredients 

  • 3 cups baby arugula
  • 6 cups cut up melon (watermelon, cantaloupe, honeydew)
  • ½ cup thin red onion slices
  • ½ cup feta cheese
  • ¼ cup orange juice
  • 1 tablespoon lime juice
  • ¼ teaspoon salt and pepper
  • ¼ cup olive oil
  • 2 garlic cloves minced
  • ½ cup fresh herbs (basil, mint, parsley)

Tips for choosing the best produce:

  • watermelon: look for a more golden ground spot on the bottom of a watermelon and white rind on the stripes
  • cantaloupe or honeydew: if you can gentle depress the skin on the opposite side of the stem.

Directions:

  • Arrange arugula, melon, and onion. sprinkle with feta

  • In a small bowl whisk together orange juices, honey, garlic, salt, and pepper. Whisking, add oil in a thin stream.

  • Top salad with dressing and herbs.
