Ingredients
- 2 tbsp olive oil
- 1 lb mushroom sliced
- 1 onion, sliced
- 1 red bell pepper, seeded and sliced
- 1 yellow bell pepper, seeded and sliced
- 1 garlic clove, crushed
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Salsa and lime wedges, for serving
Directions:
- Heat the oil in a large skillet.
- Add mushrooms, onion, garlic, and stir fry for 8-10 minutes until the vegetables are cooked
- Add the cayenne pepper, lime juice, oregano. Season with salt and pepper to taste and cook for an additional 2 minutes.
- Meanwhile heat the tortillas according to the package directions.
- Divide the mushroom mixture among the warmed tortillas, roll up, and serve with the salsa and lime wedges.
