Mushroom Fajitas

Ingredients 

  • 2 tbsp olive oil
  • 1 lb mushroom sliced
  • 1 onion, sliced
  • 1 red bell pepper, seeded and sliced
  • 1 yellow bell pepper, seeded and sliced
  • 1 garlic clove, crushed
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Salsa and lime wedges, for serving

Directions:

  • Heat the oil in a large skillet.
  • Add mushrooms, onion, garlic, and stir fry for 8-10 minutes until the vegetables are cooked
  • Add the cayenne pepper, lime juice, oregano. Season with salt and pepper to taste and cook for an additional 2 minutes.
  • Meanwhile heat the tortillas according to the package directions.
  • Divide the mushroom mixture among the warmed tortillas, roll up,  and serve with the salsa and lime wedges.
