Ingredients
- 1-pound potatoes (halved, thinly sliced)
- 2 teaspoons garlic (minced)
- 1-pound green beans (ends trimmed)
- 2 tablespoons canola oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 4 skinless salmon filets
- ½ lemons, sliced into wheels
Directions:
- Preheat oven to 400 degrees. make four sheets of aluminum foil about 30 inches long. Fold the foil in half width wise (almost a square so its sturdy)
- Thinly cut potatoes and place in heat proof container. Stir in the minced garlic, cover and cook the potatoes in the microwave until halfway tender, around 90 seconds to 3 minutes. Transfer mixture to bowl, along with green beans, oil, salt and pepper. Mix to combine.
- Divide potato mixture into 4 equals portions into the center of each foil square. top each portion with salmon fillet. sprinkle garlic powder onto each piece and top with two lemon wedges.
- Securely seal the top and sides of each foil pack. Place onto a large baking sheet and bake in the oven for about 20 minutes.
- Carefully open each packet to serve.
