Chickpea Salad

A great base for any raw, roasted, or grilled vegetables, add tuna, tofu, grilled chicken, or your choice of meat.

Ingredients 

  • ¼ lemon juice
  • 2 garlic cloves minced
  • 1/2 tsp ground cumin
  • 2 15-16oz cans, rinsed and drained
  • 4, green onions sliced
  • ½ cup roasted red peppers
  • ½ cup parsley chopped
  • ½ cup feta cheese crumbled

Directions:

  • In a large bowl whisk together the lemon juice, garlic, cumin, ¼ cup olive oil, ½ tsp salt and ¼ tsp of black pepper. Add chickpeas, green onions, roasted red peppers, and parsley; stir to combine.

  • Top with feta and additional parsley and black pepper.
