A great base for any raw, roasted, or grilled vegetables, add tuna, tofu, grilled chicken, or your choice of meat.
Ingredients
- ¼ lemon juice
- 2 garlic cloves minced
- 1/2 tsp ground cumin
- 2 15-16oz cans, rinsed and drained
- 4, green onions sliced
- ½ cup roasted red peppers
- ½ cup parsley chopped
- ½ cup feta cheese crumbled
Directions:

In a large bowl whisk together the lemon juice, garlic, cumin, ¼ cup olive oil, ½ tsp salt and ¼ tsp of black pepper. Add chickpeas, green onions, roasted red peppers, and parsley; stir to combine.

Top with feta and additional parsley and black pepper.
