Ingredients
- olive oil, for greasing
- 1 cup whole wheat flour
- 1 tbsp baking powder
- ½ cup light brown sugar
- ½ cup rolled oats
- ¾ cup chopped fruit (your choice)
- 2 eggs
- 1 cup buttermilk
- 6 tbsp olive oil
- 1 tsp vanilla extract
Directions:
- Preheat the oven to 400 degrees. Grease a 12-cup
- muffin pan or line with 12 paper liners. Sift together the flour and baking
- powder into a large bowl. Stir in the sugar, oats, and chopped fruit (your
- choice).
- Lightly beat the eggs in a large pitcher or
- bowl, then beat in the buttermilk, oil, and vanilla extract. Make a well in the
- center of the dry ingredients and pour in the beaten liquid ingredients. stir
- gently until just combined; do not over mix
- Spoon the batter into the prepared muffin pan.
- Bake for 20 minutes, until well risen, golden brown, and firm to the touch
- Let the muffins cool in the pan, serve warm or
- transfer to a wire rack and let cool.
