Fruit and Oat Muffins

Ingredients 

  • olive oil, for greasing
  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • ½ cup light brown sugar
  • ½ cup rolled oats
  • ¾ cup chopped fruit (your choice)
  • 2 eggs
  • 1 cup buttermilk
  • 6 tbsp olive oil
  • 1 tsp vanilla extract

Directions:

  • Preheat the oven to 400 degrees. Grease a 12-cup
  • muffin pan or line with 12 paper liners. Sift together the flour and baking
  • powder into a large bowl. Stir in the sugar, oats, and chopped fruit (your
  • choice).
  • Lightly beat the eggs in a large pitcher or
  • bowl, then beat in the buttermilk, oil, and vanilla extract. Make a well in the
  • center of the dry ingredients and pour in the beaten liquid ingredients. stir
  • gently until just combined; do not over mix
  • Spoon the batter into the prepared muffin pan.
  • Bake for 20 minutes, until well risen, golden brown, and firm to the touch
  • Let the muffins cool in the pan, serve warm or
  • transfer to a wire rack and let cool.
